Healthy Banana Muffins

It’s a cooooooold day here in Texas.  And when I say cold, I mean it…there is actual snow on the ground!  So for us, that means the whole town has shut down and there is nothing to do except hang out inside.  What a perfect day to bake!

I’ve been making this recipe for about 6 months now.  And every time I make it, I change something.  Either I’m out of a needed ingredient, or I’m feeling experimental ;0 .   My husband hates experimental…he says leave a good thing alone!

Anyhow, I’m sharing my latest version with you.  Feel free to omit, add, or experiment if you want!

Healthy Banana Muffins

Makes 12 servings

Ingredients:

1 1/4 C flour (I use whole wheat pastry flour)

1 1/4 tsp baking powder

1/2 tsp baking soda

2 1/2 tsp cinnamon

1/8 tsp salt

2 egg whites

3 bananas, mashed

1/2 C sugar (I use Organic Cane Sugar, but have made it with honey too)

1/3 C applesauce (Organic, Unsweetened-If you buy the 4 oz individual cups-use 1 of those)

1 1/2 tsp vanilla

1/8 tsp nutmeg

1 Tbsp Wheat Germ (can omit)

Additions: For an extra treat, I will add chocolate chips.  Also wonderful with nuts, if you have no allergies!  I don’t measure these ingredients, as no one in my family likes the same additions so I add it here and there!

Directions:

 1. In a large bowl mix:  flour, baking powder, baking soda, cinnamon, nutmeg, salt, and wheat germ.  Then, in a smaller bowl, mash bananas and mix in egg whites, sugar, applesauce, and vanilla.

2. Make a well in the middle of the dry ingredients and pour the wet ingredients into it.  Fold dry into wet.  Mix ingredients only until combined.  Over mixing will determine the density of your muffins.

3.  Grease or line muffin pan and pour in mixture.  Bake @ 350° for 15-20 minutes.  When toothpick is inserted and comes out clean, your muffins are done!!!  Enjoy!

*This can also be baked as a loaf in a 8x4x2 in loaf pan @ @ 350° for 45-50 minutes.

*Muffins freeze well!  Wrap each individual muffin in plastic wrap, then place in freezer bag.  Take out the night before and place in fridge to thaw for breakfast!

*TIME SAVER TIP: Double the recipe, and freeze the extra!

    1. Thanks! The choc chips really add the perfect sweetness to it…but I’m a chocoholic! And I bet you could add more than a Tbsp of Wheat Germ. Today was the first day that I did it, and it didn’t change the taste at all. You only have to watch the moisture ratio…might have to add extra applesauce if you add more dry ingredients!
